Mint and Chilli Haloumi with Roast Vegetable Salad



Ingredients:

2 small red onions, quartered
500g sweet potato, cubed
1 orange or yellow capsicum, thickly sliced
2 medium zucchini, thickly sliced
2 garlic cloves, minced or 2 tsp garlic bulbils
2 tbsp melted coconut oil or ghee
salt and pepper (or Herbamare)
250g roma or cherry tomatoes
250g haloumi, sliced thinly
2 tbsp fresh mint, finely chopped
1 long red chilli, seeded and finely chopped
extra mint and salad leaves of choice to serve
¼ cup lemon juice
